A simple, traditional and healthy recipe that can be used both as a starter and as a side dish.
Ingredients:
- 1 bunch of asparagus and/or green beans.
- 2 large cloves of garlic
- 1 small handful of frozen onion, chopped
- 1 handful of ground white almonds
- 1 medium-sized free-range egg
- 1 dash of vinegar
- A handful of pine nuts
- 2 dessertspoons of sweet paprika
- 1 large splash of extra virgin olive oil (enough to cover the bottom of a large frying pan)
Preparation:
Wash the asparagus and cut them into small pieces (about 1 cm), place them in a deep dish, sprinkle with a few drops of water and put them in the microwave for 3 minutes.
In the meantime, peel and fry the 2 cloves of garlic in a large frying pan over a medium heat together with the onion and add any other spices you like. When the garlic and onion are golden brown, add the ground almonds and brown them a little.
Put the garlic, onion and almonds in a large mortar and pestle, add a splash of vinegar and crush everything, then add the 2 small spoonfuls of sweet paprika and a glass of water.
Brown the asparagus with the pine nuts for 5 minutes in the same frying pan that was previously used for the garlic over a high heat and finally add the contents of the mortar with a little more water and cover.
When it starts to cook, put it over a low heat, as little as possible so that it does not stop cooking and leave it for 5 or 10 minutes, until most of the broth has been consumed, then add the egg, stir everything and remove from the heat.
