Scrambled eggs with mushrooms, wild mushrooms and prawns

This stir-fry can be prepared in a short time. It is a light, simple dish with a lot of flavour.

Ingredients:

  • 1 bunch of wild asparagus (approx. 350 gr.)
  • 1 packet of frozen mushrooms (approx. 450 gr.)
  • 1 packet of frozen prawns (approx. 400 gr.)
  • 4 eggs
  • Extra virgin olive oil
  • Parsley 
  • 3 cloves garlic
  • Salt

Preparation:

Chop the mushrooms, put a dash of oil in a frying pan and heat over high heat, fry the mushrooms with the chopped garlic and a little parsley. While the mushrooms are cooking, wash the asparagus, remove the ends, cut them into pieces, put them in the microwave for 3 minutes and add them to the frying pan, while frying them a little, beat the eggs in a bowl and add the asparagus, mushrooms and salt to taste.

In the same frying pan where the asparagus and mushrooms have been browned, add a little oil and add the prawns without defrosting. When they start to turn from transparent to white, add the egg mixture with the asparagus and mushrooms, stir and remove from the heat when the egg has set.
