You'll be surprised, it's a great alternative to sponge cakes or brownies made with gluten-containing flours and sugar. The taste is delicious and it couldn't be more nutritious and healthy. A great breakfast option for the kids, I'm sure they'll love it!
Ingredients:
- 150 g ground almonds
- 2 organic eggs
- 200 g dates
- 1 glass of water or almond milk
- 1 sachet of baking powder
- 30 g pure cocoa powder
I recommend you to use organic ingredients if you can, it is always much better.
Preparation:
Preheat the oven to 180°C. Put all the ingredients in a blender and blend them into a paste. If you use soft dates such as Medjool dates, you don't need to cook them first, but if you use harder dates such as Deglet dates, you will find it easier to give a good texture to the batter if you cook them with a little water for 5 minutes to soften them before beating them. Put the mixture in a cake pan lined with baking paper and bake for about 40 minutes or until you see that the brownie is well done.
Note: You can replace the ground almonds with ground hazelnuts, or use half and half. Both options are equally healthy, although the hazelnut has slightly less anti-nutrients than the almond. If you use hazelnut, you will notice a delicious "Nutella" taste.
